Chalmers Vineyard, Colbinnabin, hybrid Traditional/Ancestral Method sparkling wine, 1/3 each 2020, 2021 and 2023 vintage wines, handpicked, whole bunch pressed, wild fermented, and stored in old barrels, blended and bottled while the 2023 portion was still fermenting. 2 years on lees. Hand disgorged 'a la volée'. Unfined, unfiltered.

This wine takes my beloved pét nat method into an innovative new direction, combining it with the traditional sparkling wine making method by blending multiple vintages with a freshly fermenting one. This is a complex wine with apple, lemon and lime fruit characters, but also with secondary nutty and autolytic characters, the bubble is gentle but persistent and the finish is softly sweet with a couple of grams of residual unfermented grape sugars.
