Chalmers Vineyard, Merbein VIC. Predominantly Lambrusco Salamino, and some Maestri in there too. Hard pressings after cutting what I need for wine. Then gently simmered for about a week until thick and syrupy and glorious.

Use it like balsamic, on salads, steamed green beans and broccoli, or roasted beetroot. Pour it on vanilla ice cream. Drizzle around a glass tumbler and fill with soda water for a non alcoholic option.
